Focaccia made using 100% sourdough (no yeast). It is a high hydration dough (80%) with organic flower honey to compliment the flavour of the T110 flour. T110 flour is not white flour, nor is it wholewheat- instead is sifted with letting more of the bran through than the flour used for cakes and pastries, but it is not wholewheat where it is not sifted at all allowing every part of the grain to remain. The dough is fermented for at least 24 hours before baking it in our bread oven.
Ingredients: Biodynamic wheat flour T110 from Germany, water, sourdough starter, organic flower honey from the Netherlands, olive oil, seasalt.
